Recruitment: The First Step in Food Safety and Health & Safety

When people think about food safety and health & safety, they usually think about training, audits, inspections or paperwork.

They’re all important. However, they aren’t where compliance begins.

Compliance begins with people.

Every food hygiene rating, every successful audit and every memorable customer experience is shaped by the people you choose to employ. Even the best food safety management system cannot make up for a team that doesn’t care. Procedures provide the framework, but people bring those procedures to life every single day.

People Create Lasting Impressions

I was reminded of this during a recent stay at Crystal Waters Lefkada in Greece.

Like many of us, I returned home remembering far more than the hotel itself.

What stayed with me was the team.

From the moment we arrived, they made us feel genuinely welcome. They remembered my name, knew the size of our party and, after recommending a local restaurant, asked us the following day whether we had enjoyed our evening.

What impressed me even more was the consistency of the service. The same members of the team looked after us at lunchtime by the pool, served us again in the restaurant that evening and were there the following morning at breakfast with the same warm smile and genuine enthusiasm.

That level of consistency doesn’t happen by accident. It reflects people who genuinely care about what they do, but it also reflects strong leadership and a positive workplace culture. When employees feel valued, supported and trusted, it shows in every interaction with customers.

Those weren’t grand gestures, and they certainly weren’t complicated. They were thoughtful, genuine moments created by people who clearly cared.

As a guest, that’s what I remembered most. It’s also why I wanted to leave a five-star review.

So, thank you to the team at Crystal Waters for the warm welcome and for reminding me that exceptional hospitality isn’t defined by a building or a brand—it’s defined by people.

Those same Great Staff Help with Food Safety and Compliance

The same principle applies to food safety and health & safety.

The people who remember to challenge poor practice, notice that a fridge isn’t holding temperature, question whether an allergen has been communicated correctly or stop to report a loose floor tile all have one thing in common. They care.

Technical skills can be taught. Systems can be improved. Procedures can be updated.

Food safety is about much more than following a checklist.

Every day, your team makes hundreds of small decisions.

It’s a powerful reminder that while buildings, dĂ©cor and technology all play a part, it’s your people who truly define the customer experience. Recruiting individuals with empathy, pride and a genuine passion for looking after others is one of the best investments any hospitality business can make.

They decide whether to challenge poor practice, report a faulty fridge or remind a colleague to wash their hands. They also decide whether to speak up when something doesn’t feel right.

These decisions come from attitude, not paperwork.

That’s why recruitment matters so much. Skills can be taught, but attitude, pride and personal responsibility are much harder to develop.

Above all, look for people who genuinely care about doing a good job.

Start With the Right Job Advert

Recruitment begins long before the interview.

The words you choose in your advert will influence who applies. Rather than simply listing duties, explain what kind of person you are looking for.

For example, instead of saying:

“Kitchen Assistant required.”

Try something like:

“We’re looking for someone who takes pride in preparing safe, high-quality food and enjoys working as part of a supportive team.”

This simple change helps attract candidates who share your values instead of those who are simply looking for another job.

Advertise in the Right Places

Where you advertise is just as important as what you say.

Indeed may work well for some vacancies. However, local community Facebook groups, hospitality colleges, employee referral schemes and industry networks can often attract people who may never search traditional job boards.

Furthermore, don’t underestimate the power of your own reputation. Businesses with a positive culture naturally attract better candidates because people enjoy recommending them.

Interview the Person, Not Just the CV

A CV tells you where someone has worked.

An interview should tell you who they are.

Instead of asking questions that produce rehearsed answers, encourage candidates to talk about real situations.

Some of the best employees come from retail, healthcare, care homes or customer service. They may not have hospitality experience, but they often bring professionalism, reliability and excellent communication skills.

Technical knowledge can be taught.

Employees talk. They tell friends about supportive managers, opportunities to develop and teams that enjoy working together.

Over time, every workplace develops habits. Unfortunately, some of those habits become shortcuts. People often say, “It’s just the way we’ve always done it.”

However, a new team member may question those habits.

For example, they may ask why temperatures are not being recorded consistently. They may notice poor allergen controls or challenge unsafe cleaning practices.

These conversations should be welcomed, not discouraged.

Recruit People Who Are Prepared to Speak Up
