What the Morrisons Bakery Prosecution Should Mean for the Wider Food Industry

The recent prosecution of Morrisons following serious food hygiene failings within a bakery department has generated significant discussion across the food industry.

The resulting fine of more than £750,000 highlights how seriously food safety enforcement is now being treated within large food businesses.

For many operators, bakery environments are often viewed as comparatively lower risk areas

Especially, when measured against departments handling raw meat, chilled ready-to-eat foods or other traditionally high-risk products.

However, the Morrisons case is an important reminder that lower perceived food risk does not reduce the expectation for high hygiene and housekeeping standards.

Reports surrounding the prosecution referenced concerns including dirty equipment, poor cleanliness, inadequate supervision and failures within the food safety management system.

For the wider industry, the key issue is not simply the condition of a single bakery department. The more important takeaway is how quickly operational standards can gradually become normalised if there is insufficient management oversight and verification.

In bakery environments particularly, issues such as:

can slowly become accepted as “part of the environment” unless there are robust systems in place to challenge declining standards consistently.

This is often how problems escalate.
