
List of approved suppliers for rare burgers published
Since March 2017, suppliers of rare burgers (or minced meat intended for burgers that will be eaten less than thoroughly cooked have to be approved by either the Food Standards Agency or their Local Authority.
Suppliers located in England, Wales and Northern Ireland must satisfy specific requirements to gain approval but Food Standards Scotland is yet to report on its strategy.
There are currently three suppliers that have been approved:
- Fairfax Meadow Europe Ltd
- Select Poultry and Meat Ltd
- Nigel Fredericks Ltd
Choosing an approved supplier is the first step in meeting the Food Standards Agency Guidance to be allowed to serve rare burgers to the public. The next step is to be able to prove that your burger recipe, cooking equipment and process will consistently achieve a 4 log reduction in bacteria. This may involve predictive and challenge testing in a laboratory.
